Technical Specifications

  • Milk Heating : Raw or standardized milk is heated in a jacketed paneer vat using steam or hot water.
  • Coagulation : A coagulant (usually citric acid or lemon juice) is added to separate curds from whey.
  • Curd Cutting & Stirring : Manual or automatic cutting blades stir and cut the curd evenly to achieve a uniform texture.
  • Whey Drainage : The curd is allowed to settle, and whey is drained out through a perforated outlet.
  • Paneer Pressing : The curd is transferred to a paneer press unit where it is compressed under pressure to form blocks.
  • Cooling & Cutting:Pressed paneer blocks are cooled and then cut into desired sizes using a paneer cutting machine.
